You would want to start out with very pure water initially for hatching as this VERY low osmotic pressure is what triggers these shrimp to hatch in the first place. Then you can mineralize the water with products such as Wonder Shells (mineral Blocks).
Personally rain water would be great as well.

i had them once
i bought distilled water from walmart because it was cheap, and didnt have any contaminants
ive heard somewhere that mineral water may help them with nutrients, but im not sure
